Levansucrase activity

We have published an article on the effect of sucrose concentration and temperature on the levansucrase from Zymomonas mobilis. The three activities displayed by this enzyme were studied: formation of levan (polymerization), production of short-chain fructooligosaccharides (FOS), and sucrose hydrolysis.
